Solutions Provided
The project team addressed these challenges by implementing a comprehensive food fitout and grease management system, handling every aspect with precision. The key solutions included:
1. Concrete Scanning, Cutting, Removal, and Replacement
The team scanned, cut, removed, and replaced the existing concrete to ensure adequate ground preparation before installing the new drainage system.
2. Installation of a 2000-Litre Below-Ground Grease Trap
A 2000-litre below-ground grease trap with Class D lids was installed in the car park zone, ensuring the business met local environmental standards for waste disposal. The installation included Class D lids, designed for heavy-duty applications, ensuring durability and long-term use.
3. Trade Waste and Sewer Connection Upgrades
- The team installed new trade waste drainage runs from the grease trap position, connecting them seamlessly to both new and existing kitchen fixtures.
- Our team installed a 50mm vent for the sewer line to ensure proper airflow and prevent blockages or foul odours.
- We also added a 100mm vent for the grease trap and trade waste line to improve waste flow and prevent buildup.
4. Hot and Cold Water Plumbing Setup
- The team roughed in hot and cold water systems to ensure a steady supply of water for kitchen operations.
- We installed tempering valves for hand basins to maintain safe and compliant water temperature for food handling and hygiene.
5. Gas System Installation
- The team installed a commercial-grade gas system using copper piping to ensure a durable and long-lasting setup.
- We sized the system for natural gas and included an emergency stop along with clear safety signage for added protection.
6. Backflow Prevention and Drainage Enhancements
- To protect the water supply from backflow pollution, two RPZD (Reduced Pressure Zone Device) valves were installed.
- In order to stop solid material from getting into the drainage system and creating obstructions, two bucket traps were fitted for floor waste.
- Three cleanouts were installed, making future maintenance and servicing easier.
7. Commercial Hot Water System Installation
Citi Industries installed a Rheem 50-litre commercial 3-phase electric hot water unit, providing a reliable hot water supply. Although they recommended gas as a better alternative, the client chose the electric unit based on site conditions and energy considerations.
